Instructions

  • Prepare the Ribs: Clean the ribs, removing the membrane on the back of the ribs if necessary. This allows them to better absorb the flavor of the marinade.
  • Marinate the Ribs: In a large bowl, mix the marinade ingredients: the Spiced Up Mexican Adobo Seasoning Blend, cider vinegar, and olive oil. Mix this well until it forms a paste. Rub this mixture evenly over the ribs, ensuring they are fully coated. You can marinate the ribs in the refrigerator for at least 2 hours, or even overnight for the best flavor.
  • Preheat the Oven: Preheat your oven to 160 degrees Celsius (320F).
  • Bake the Ribs: Place the ribs on a baking sheet. If you are using bay leaves, place them on top of the ribs. Cover the pan with foil to lock in moisture and bake for about 2 to 2.5 hours, or until the ribs are tender.
  • Sealing the Ribs: After the ribs are tender, remove the foil and raise the oven temperature to 200 degrees Celsius (400F). Bake for 15-20 minutes more, or until they are golden brown and slightly crispy on the outside to caramelize them. You can also grill them for a few minutes instead.
  • Serve: Remove the ribs from the oven and let them rest for a few minutes before slicing. Serve with your favorite side dishes, such as rice, beans, salad, or tortillas.
