Ingredients

  • 4 cups sharp cheddar cheese, shredded
  • 1 cup manchego cheese, shredded
  • 1 cup Gouda cheese, shredded
  • 1 half cup butter
  • 1 half cup flour
  • 2 cups half and half
  • 3 cups milk
  • 1 lb macaroni
  • 1 tsp salt
  • 1 tsp Spiced Up Italian Magic Seasoning Blend

Optional Topping

  • 1 cup panko bread crumbs with 2 tbsp melted butter for topping

  • 1 cup manchego cheese, shredded
  • 1 cup Gouda cheese, shredded

  • 1 half cup flour
  • 2 cups half and half
  • 3 cups milk
  • 1 lb macaroni
  • 1 tsp salt
  • 1 tsp Spiced Up Italian Magic Seasoning Blend

  • 1 cup panko bread crumbs with 2 tbsp melted butter for topping

Instructions

  • Prepare the Cheese: Grate all the cheeses into a bowl. Mix them together and set aside at least 1 cup of the mixture for the top of the mac n cheese before baking.
  • Cook the Pasta: Boil 1 lb of macaroni pasta in salt water. Cook for about 7 minutes. Drain the pasta and add it to an oven-safe pan.
  • Make the Roux and Add Liquids: For the cheese sauce, add butter to a large saucepan or pot and let it melt. Add the flour and mix well until fully combined. Cook for about 2 minutes, then add the milk and half and half while continuously stirring.
  • Season and Thicken: Add the Spiced Up Italian Magic Seasoning Blend and the salt. Continue stirring as you bring the sauce to a gentle simmer.
  • Finish the Sauce: Sprinkle 3 cups of the grated cheese mix (reserving the final cup for the topping) and mix well on low heat until everything is combined and the sauce is smooth.
  • Combine and Bake: Pour the cheese sauce over the macaroni in the oven-safe pan. Mix to fully coat the pasta. Top with the remaining 1 cup of shredded cheese and the optional panko bread crumb mixture.
  • Bake: Bake for about 20 minutes at 350F (175C), or until the top is bubbly and golden brown.
